I feed my birds a mixture of seeds/pellets/fruits/ and a mash made of different beans, veggies, rice, sweet potato, boiled egg, etc.
Everyone has an opinion on nutrition, but healthy variety is key. Looks like you’re fine on that

That looks like a good diet. My eclectus, conure & tiel don’t eat pellets either, mainly cos they’re almost impossible to get hold of here without online ordering.
I would cut the lettuce out, ice burg anyway. The paler the veg, like iceburg lettuce & celery, the less nutrients in them, the more water in them. Red lettuce, rich dark green, brightly colooured fruit & veg are always the best to give them.
Dried fruit isn’t recommended unless you dry it yourself, I can’t remember why ????
Cooked poultry & fish is excellent for them as long as it’s plain cooked, no oils, salt ect added to it.
